Ricotta, Gorgonzola, and
Honey Spread

15-oz. carton whole milk ricotta cheese
6
oz. Gorgonzola cheese, crumbled
1
/s tsp. snipped fresh thyme or / i tsp. dried
thyme, crushed
/
tsp. snipped fresh rosemary or % tsp. dried
rosemary, crushed

Tbsp. honey
36 toasted baguette slices
Sliced apples, fresh thyme, and/or toasted
chopped walnuts
Honey
1. Place ricotta in a large mixing bowl. Beat with an
electric mixer on medium speed for 2 minutes. Stir
in Gorgonzola, !/2 teaspoon thyme, and /4 teaspoon
rosemary until combined. Fold in ! tablespoon honey
until just combined. Spoon mixture into a serving
bowl. Cover and chill ! to 24 hours.
2 . To serve, spread on baguette slices and top with
apple slices, thyme, and/or walnuts. Drizzle with
honey. Makes 36 appetizer servings.

Four-Cheese Pimiento Dip

3-oz. pkg. cream cheese, softened

oz. extra-sharp cheddar cheese, shredded

oz. extra-sharp white cheddar cheese,
shredded (2 cups)

oz. Gruyère cheese, shredded (1 cup)

cup mayonnaise
1
4-oz. or two 2-oz. jars diced pimientos,
drained
1/2
cup finely chopped green sweet pepper
1
/3
cup finely chopped onion
1
small jalapeno pepper, stemmed, seeded, and
minced*
1
Tbsp. Worcestershire sauce
1
/4
tsp. cayenne pepper
Optional Stir-Ins: crumbled crisp-cooked
bacon, toasted pecans, chopped green onions,
or diced tomatoes
Dippers: celery sticks, carrot sticks, pita
chips, and/or crackers
In bowl beat cream cheese 30 seconds. Gradually
beat in other cheeses. Beat in mayonnaise. Stir
in pimientos, sweet pepper, onion, jalapeno,
Worcestershire, and cayenne. Add chosen stir-ins,
or divide the pimiento cheese into portions and
add a different stir-in to each. Serve with dippers.
Makes 5 cups. (Recipe can be halved, if desired.)
*Hot chile peppers, such as jalapenos, contain oils
that can burn your skin and eyes. When working
with them, wear plastic or rubber gloves. If using
bare hands, wash hands well with soap and water
after working with the peppers.
